The Vegan Galaxy Butterfly Pea Donut Recipe

If you're not familiar with baking or making pastries, that's okay! This recipe is simple and totally easy to follow. You wouldn't have to worry about fancy baking tools or anything else. The important thing is that you get the right ingredients and follow each step carefully. Soon enough, you'll be having a tray of these scrumptious Blue Butterfly Pea Powder-glazed doughnuts!

Ingredients 

Here are the ingredients you will be needing to create the Galaxy donuts:

  • 1 cup flour (gluten-free)
  • 2 tablespoons sweet potato flour
  • 1 teaspoon baking powder
  • 1/4 salt
  • 1/4 cup maple syrup 
  • 1 cup unsweetened almond milk + 1/2 teaspoon apple cider vinegar (buttermilk)
  • 2 tablespoons rice bran oil
  • 2 tablespoons organic egg replacer + 2 tablespoons water (or 1 egg)

Ingredients for the donut glaze:

  • 1 cup organic powdered sugar
  • 2 tablespoons unsweetened almond milk 
  • 1/4 teaspoon butterfly pea powder + a few drops of clear alcohol of your choice
  • 1/4 sweet potato powder

Directions 

1. Preheat oven

Preheat the oven to 180°C. While waiting, prepare the doughnut spray using a non-stick baking spray.

2. Combine dry ingredients

Add the flour, sweet potato flour, baking powder, and salt in a medium bowl. Stir thoroughly until they're mixed well. 

3. Combine wet ingredients

Add the buttermilk (almond milk + apple cider) and the egg replacer in a small bowl. Slowly add the rice bran oil while whisking the mixture. Stir until it appears to be smooth. 

4. Combine wet and dry ingredients
